What you need to do is basically identify if called ID is stored on variable CALLID1, CALLID2, CALLID3 or CALLID4 that are passed to faxnotify script. These variables too are used in templates for e-mail notification.
In my case, called number is stored in CALLID4, so I modified my etc/templates/en/faxrcvd-notify-success.txt files to look like this (I also removed lines I don't need to appear in e-mail fax notification):

Error Correct: $ERRCORRECT
