You can't really get any low level logging out of Microsoft Fax. You can
produce high level TAPI logs using the Phone and Modem Options of the
control panel, selecting properties, and then enabling logging for the modem
of interest.  Here's an example of what you will see;

I should add that when we tested the IP568x chipset a couple of years ago we
had a lot of problems with the embedded firmware when used for fax.  If your
modem doesn't have an external flash chip and/or you can't get a firmware
upgrade then you might want to reconsider your decision to use this modem.
