Make sure they're using (unique!) dummy text in each field you wish to replace, like XXY_FIELD1_YXX, etc. Then just "Print to Postscript" (Print to File with a very basic Postscript printer driver, like the Apple Laserwriter II or HP Laserjet 4PS, etc). That will be a pure ASCII Postscript file. You can then easily look for the unique field names and replace them on the fly with your desired text. Be careful though - if you have "multi-line" data, you will need to have dummy text for each one, or handle the wrapping of the text on your own.
