Configuring WinPrint you'll find a box where you can specify the modem 
you want to use (see http://winprinthylafax.sourceforge.net/ for 
screenshots).
Using sendfax line command from linux, specify the option

-n ttyIAX1@xxxxxxxxxxxxxxx

where xxx.xxx.xxx.xxx is your fax server IP address.
Remember that if the modem is busy or unavailable, your fax will be sent 
via a different modem (and then from a different phone number or Local 
Identification String)
