We are getting a new phone line where phone calls are cheaper than with the old one.

VoIP?

I now have a modem and a Hylafax server connected to the old line, and I was going to just connect it to the new line, but then I would not receive faxes from the old one, and everyone has the number of the old line.

Since we are going to keep the old line I was wondering if I could connect both lines to the modem with a T adapter (the same that is used to connect two phones to a single line).

I would recommend that you get another modem and connect each phone line to a separate modem ... or port the old phone number to the new line.

Would this be possible? If so, can I tell Hylafax to use only one of them for outgoing faxes?

You can tell HylaFAX which modem to use.
