Sure.  Lots of people.  I just got here first.  :-)

The facility you need is the 'faxrcvd' script.  It's run after each
fax is received, and can do what you need.  Check the manual page to
see how it works.

Oh, and for the other gentleman, yes, faxrcvd is given the device id
on which the fax was received, so you can dispatch one modem vs. your
others.
