Yes, have a look into the  man pages

http://hylafax.sourceforge.net/man/sendfax.php

and use sendfax with the -h Parameter

-h [modem@]host[:port]


Sorry I wasn't quite clear enough with the first message.  I'm trying to use a Windows based client (Frog Fax) that does not have a "Modem" option in the configuration and was hoping to control which outbound modem was used via the server.  I'm running Hylafax 4.4.4 on a CentOS 5.1 server.
