Someone else covered the DID option, which is the most direct.   
Another option is to ask callers to dial a code, however this would  
depend on compliant callers.  If you have a few people who fax  
frequently they can be trained, but this won't work for general public
 
use.

If you get T.38 fax service you can get as many numbers as you want.  
We currently pay about $9 per T.38 trunk and $1 per add-on number.  
One trunk can carry an unlimited number of phone numbers.
