It watches the main logs, and I believe it's more geared towards security events, but it's customizable. I have not used it on a Hylafax server, but if hylafax is dumping to syslog, logcheck should just pick it up. You can just apt-get install logcheck Everything is under /etc/logcheck.d IIRC.
