Putting e-mail into the middle of that approach seems rather laborious 
to me.  I would think that you could do what you want with the archiving 
(see 'man faxqclean') or maybe with FaxAccounting (see 'man xferfaxlog') 
in HylaFAX+.  Then it's just a mere 'cp' rather than dealing with all of 
that mail stuff.
