It's all easy to tweak.  Even an audio recording of the fax session 
itself is rather easy to falsify.

You could do all of this in FaxNotify or a modified notify script, yes.

However, my take on this would be that if you're going to have a hassle 
with the receiver not acknowleging that they received a document from 
you then any "proof" that you can give will not be as good as mailing 
out the document afterwards with a carrier that will require a signature 
and provide you with a proof of delivery... yet, even then the receiver 
can debate what they actually signed for - what was actually in the 
envelope.
