Please take a look at the mailer you're using to forward the messages. 
There you should look at the documentation/config regarding the encoding 
of your messages.

Below two example extracts of valid SMTP headers containing Umlaute. 
That's the way your SMTP headers should look like to be compliant with 
the specific RFC's.

Date: Tue, 19 Dec 2006 06:00:00 +0100
Subject: =?iso-8859-1?Q?=D6ffentliches_Kaufangebot_f=FCr_die_Bank_Linth?=
MIME-Version: 1.0
[...]
Subject in any compliant mail client:
Öffentliches Kaufangebot für die Bank Linth

[...]
Date: Fri, 29 Sep 2006 17:34:50 +0000
MIME-Version: 1.0
Subject: =?UTF-8?Q?F=C3=BCr_dies_und_das?=
