As administrator you can accomplish this with JobControl and TimeOfDay... you'll probably want to only apply non-default TimeOfDay settings to some jobs, and so you'll need a way to match those jobs, and I'd suggest using 'sendfax -i christmas' for that purpose (match jobs with "christmas" identifiers). The submitter will probably need to specify a non-default killtime as well (-k).

The client is not able to give a TimeOfDay-like value to the server... only a start time (no reschedule time). Which means if you want to do this fully on the client side you'd have to set up a cron job or something that would faxalter the appropriate jobs.
