Technically if I have a modem on my windows box, and I was running a
vmware application running fedora 5, I could run the hylafax server and
be able to send faxes using a windows client such as WHFC or winprint
hylafax to the hylafax service running inside the vmware appliance.

Installations of HylaFAX on VMWare virtual machines have been known to work, but a variety of problems can be encountered when HylaFAX tries to control the virtual modem device, depending upon the type of fax modem you have installed in the host OS (presumably Windows in your scenario). Generally, I think it's best to let HylaFAX have direct, native and full control of any modem device instead of going through a hardware virtualization layer.

The client/server scenario you propose should work fine, since when setup in bridged or NAT mode your VM will have its own IP.
