Installations of HylaFAX on VMWare virtual machines have been known to work, 
but a variety of problems can be encountered when HylaFAX tries to control 
the virtual modem device, depending upon the type of fax modem you have 
installed in the host OS (presumably Windows in your scenario). Generally, I 
think it's best to let HylaFAX have direct, native and full control of any 
modem device instead of going through a hardware virtualization layer.

The client/server scenario you propose should work fine, since when setup in 
bridged or NAT mode your VM will have its own IP.
