I'm currently using an IAXModem + Asterisk + Hylafax setup and it works
flawlessly.  We do all of our faxing in and out via the virtual modems on
our PRI.

Same here but in this case the PBX can only have one T1 card. I'm looking at
replacing it with an Asterisk system.

I've not done a HylaFAX system between the telco and the PBX, but I have 
put a T1 PBX between the telco and the HylaFAX system:

Telco T1 PRI <---> T1 PRI PBX <---> T1 PRI HylaFAX
