Well, from what I have read and understood at the moment, I have set ServerTracing to 0xFFF, and the following parameters

CallIDPattern:         "NAME="
CallIDPattern:         "NMBR="
CallIDPattern:         SHIELDED_DTMF
CallIDAnswerLength:    10

But can't get any useful information to extract DID.


I may be mistaken here, but DID will only work with a T1 or a PRI. Regular analog POTS lines do not send DID information. You can route the faxes based on incming callerID or by which phone line the call came in on (you would route by device in that case)
