To expand a bit: some models of modem will operate on a line with no
current -- called a "dry line" in the business -- and some won't. Even
if yours will, as Lee notes, you'll have to answer manually, since you
can't generate a ring signal (and you'll almost certainly have to set
ATX4 on the "dialling" modem).
Alternatively, if you want to spend the money, you can buy a box called
a "line simulator" (the canonical box is a Viking, but they're made by
other manufacturers, too). When you pick up one line, and send some
minimum number of touch tone digits, the other port rings. They're
nice, but they're close to $200.
If you're demo'ing to clients, though, they may be worth the money.
