Cypheus Settings -> System -> Document folders
(it's only available, if you are using MySQL connection/Fax Info
Center)

- User has to drag them manually.
- In the next version you may use Rules Wizard to copy/move them
automatically

> Is there a book on Cypheus?

Address books?
Yes, as many as you like.
