We use Sambafax for this. The fax numbers need to be embedded in the document. In our case, we have an Access database application which generates orders etc. The recipient's fax number is on the order and Sambafax picks it out. It's a very nice solution. Click a button and off goes the fax. I've made some improvements to the Sambafax script (in particular fixing it to work with landscape documents and making the fax number parsing more robust).
