Hi,
the best source for these info's is at the moment the sourcecode,
especialy the file called parser.c++ (i think thats the name, but
i'm not shure, something like that) in the hfaxd subdir of the sources.
the basic protocol is ftp with some extensions for faxing.
And you can use the -vv option to sendfax to see which kommands
are sent and the responses to them to get an impression
how things work
