Many thanks for the response!  I found the port.  I had it defined to
"hylafax".  Sheesh.

I've gotten Cyfeus to work several times from Word via Apple laserwriter but
now I keep getting a "no carrier detected" in the transmission logs. 

Anyone have any thoughts?

The default port of HylaFAX is 4559.
This should be shown at the first start of Cypheus.
But I changed the login a little bit, so the default port will
always be 4559 (and not 0 after changing the server port/name).
