You should search in etc not /etc
if you are in /home/jon
and do
rpm2cpio rpmname.i386.rpm|cpio -dim etc/rc.d/init.d/hylafax
then look into /home/jon/etc/rc.d/init.d

If you want to try the src.rpm then use the rh7 one which has the init
script.
Install it and look into /usr/src/redhat/SOURCES
for a file called hylafax_rh.init
