Use fax2ps.

You won't get words: the best you will get will be an *image* of the
fax page. Turning it into words would require a decent On-Line
Character Recognition program, such as what comes with the Paperport
scanners.

If they want to send you a document as words or a document you can
edit, they should send you email....
