Simple Mail-to-fax gateway?

The REAL problem is, how can I restrict this gateway to certain numbers easyly?

We're using email addrs like "matthias.fax@faxserver.domain"
and a small ascii database to resolve "matthias.fax" to
the name of the company, the fax-number and the name of
the recipient; all the work is done in a small shell script
called by the mail transport agent at "faxserver.domain".

If "name.fax" is not in the database the mail bounces.
