Hello Giulio,

this might be a misconfiguration (variables MIMENCODE and ENCODING) or  
a bug in the notify script. See this bug report:

Which HylaFAX version do you use?
Binary package or build from source?
Please, show the values of MIMENCODE and ENCODING in setup.cache,  
FaxDispatch and FaxNotify.
