I'm not that familiar with printing in Linux as I've never had the need
but in Windows I print documents to an Apple LaserWriter driver and
"Print to File".
This will work in any application you want to print from as long as you
can setup the LaserWriter printer driver (or similar) in Linux.
Check out wvware. This is the doc converter used in the abiword word processor. It can convert to multiple formats.

Sorry it doesn't do anything for xls.
You might want to search gnumerics web site for info about their doc conversion tools.

I found antiword, developed by Adri van Os (which did a great job with it), but
